Coray Kitchen is a warm and intimate neighborhood kitchen and gathering place located in the heart of Delmar, NY, offering seasonally-driven, globally-inspired flavors by Chef Javier Villatoro, my husband and co-owner.
Coray Kitchen delivers an elevated dining experience, fresh oyster bar, craft cocktail program, and down-to-earth atmosphere for the greater Capital Region.
Everything is made from scratch, embracing slow time, developed flavors, and a sense of home. Here, food is love and our time together is a sacred act of communing with each other, the earth, and our community. We are proud to work with a growing list of local Hudson Valley farms, as well as sourcing from our own backyard garden, to deliver the best of the region.
I grew up in Delmar and went to Bethlehem Central High School before moving out West. I met Javier in 2014 while working at Bi-Rite Market in San Francisco. Javier was leading the commissary kitchen, and I was in catering and sales. Ten years, two children, a lot of good food, and many experiences later, we are thrilled to realize our dream of opening a restaurant in the town they feel so lucky to call home.
We live in Glenmont with our two children, cat Rio, and an ever-growing garden. Our daughter, Magdalena, is the artist in the restaurant.
